Prospect Winery has partnered with Rogers’ Chocolates to craft a new BC Icewine chocolate creation. Part of the historic BC Choclatier’s 125th Anniversary celebrations, the pairing revels in the age-old artistries of chocolate and winemaking while unveiling something entirely new.
Rogers’ Master Chocolatier Cornell Idu has created the decadent Icewine Truffles and Icewine Bars using Prospect Winery’s The Lost Bars Vidal Icewine (VQA). Uniquely Canadian, Icewine is produced when grapes are left to freeze on the vine late in the harvest season then pressed to capture the concentrated sweetness. Nectar from each frozen grape produces Icewine. Rogers’ have combined the exquisite mastery of Icewine with their rich chocolate ganache to create this one-of-a-kind recipe, for a piece of chocolate indulgence.
Idu explains, “My inspiration was to showcase the best Canadian Icewine I could get my hands on. My favourite is from Prospect Winery; the honey mango and tangerine flavours work so well with our dark chocolate ganache centre." Prospect’s Winemaker Wade Stark was thrilled with the delicious results. “I was delighted that Cornell was inspired to use our Icewine and to find such an ideal pairing,” observed Stark, “What could be a more enjoyable for the palate than Icewine and chocolate than two exquisitely rich treats?”
